How we make it
We set the whole morning milk into curd. The next day that curd is hand-churned until the butter separates, and the butter is simmered slowly until it turns golden and grainy. That is the bilona method, and it is the reason a kilogram takes roughly twenty-five litres of milk and the better part of two days.
What bilona is not
Most ghee sold as bilona in Hyderabad is made by spinning cream out of milk in a separator and boiling it. It is faster, it costs a fraction as much, and it is a different product. A cream separator is not a bilona. We do not own one.
Why A2, and why it matters here
Every cow in our herd is a humped Bos indicus — Sahiwal and Gir. There is no Jersey or Holstein-Friesian on the premises, so there is no A1 milk here to blend in even if we wanted to. That is the difference between ghee described as A2 and ghee that actually is.
What it looks like
Golden, granular once it sets, and strong enough in aroma that you will know before you taste it. Grain size varies with the weather — a coarser grain in winter, smoother in summer. That variation is normal in real ghee and absent in the standardised kind.
Questions about our ghee
Is this ghee really made by the bilona method?
Yes. It is churned from cultured curd, not from cream separated out of milk. We do not use a cream separator or a centrifuge. You are welcome to visit the goshala and watch the churning.
How much milk goes into one kilogram of ghee?
Roughly 25 litres of A2 desi cow milk. That ratio is what sets the price at ₹5,000 per kilogram.
Is it made from Gir or Sahiwal cows?
Both. Our herd is entirely humped Indian cattle — Sahiwal and Gir. We do not keep crossbred or exotic cows.
How should I store it?
At room temperature in a dry, closed jar, away from sunlight. It does not need refrigeration. Always use a dry spoon.
