Our own milk, nothing bought in
The curd is set from the same A2 Sahiwal and Gir milk we deliver — whole, not skimmed, and never bought in from another dairy. That is unusual: a good deal of curd sold in the city is set from procured or reconstituted milk.
Why it is sweet and not sour
It is cultured and then left alone to set at its own pace, and it reaches you soon after. Sourness in shop curd usually means it has been standing too long or has been set too warm to hurry it along.
What to use it for
Curd rice, majjiga, raita, and the daily dadhi that Ayurveda places at the middle of the meal rather than the end of it. It also makes properly thick buttermilk, because there is real fat in it.
The same curd becomes our ghee
Nothing else. The curd we churn for bilona ghee is this curd. If you have tasted the ghee and wondered where the flavour comes from, this is the answer.
Questions about our curd
Is the curd made from A2 milk?
Yes. It is set fresh each day from our own whole A2 desi cow milk — nothing bought in, nothing blended.
Is it sour?
It should not be. It is cultured and left to set undisturbed, then delivered soon after, so it comes out thick and mildly sweet.
What is the smallest quantity?
Half a kilogram. Most households take half a kilo or a kilo a day alongside their milk.
Is it skimmed?
No. It is set from whole milk, which is why it is thick and why the buttermilk from it is not watery.
Can I order curd for today?
No. Curd is pre-order only: we set it fresh for your order, so please order at least 24 hours ahead. We do not deliver the same day.
